Fine Dining Server — Job Description
Position Summary
The Fine Dining Server is responsible for providing an exceptional dining experience through knowledgeable, attentive, and professional service. The server represents the club or restaurant and is expected to anticipate guest needs, demonstrate strong menu and beverage knowledge, and maintain the highest standards of hospitality throughout the dining experience.
Key Responsibilities
Guest Service
Welcome members and guests warmly and professionally.
Provide attentive, personalized service from greeting through departure.
Anticipate guest needs and respond promptly to requests.
Maintain a professional, positive, and polished demeanor at all times.
Recognize and remember member preferences whenever possible.
Handle guest concerns with patience and professionalism and notify management when appropriate.
Create a welcoming atmosphere that encourages guests to return.
Food & Menu Knowledge
Be thoroughly familiar with all menu items, ingredients, preparation methods, and presentations.
Explain dishes accurately and confidently.
Be knowledgeable about daily specials, chef features, and seasonal offerings.
Identify common allergens and understand available gluten-free or dietary modifications.
Communicate special requests and dietary restrictions accurately to the kitchen.
Never guess when answering a guest’s question—ask a manager or chef when necessary.
Wine & Beverage Service
Maintain strong knowledge of wines, cocktails, beer, and non-alcoholic beverages.
Make appropriate beverage recommendations based on guest preferences and meal selections.
Properly present, open, pour, and serve wine according to fine dining standards.
Maintain awareness of by-the-glass offerings and current wine features.
Follow all responsible alcohol-service policies.
Table Service
Follow proper fine dining service sequence and etiquette.
Set and maintain tables according to established standards.
Serve and clear food and beverages appropriately and efficiently.
Maintain proper plate, glass, and silverware placement.
Monitor the table throughout the meal without being intrusive.
Clear and reset tables efficiently while maintaining a polished appearance.
Check food presentation and accuracy before serving.
Teamwork & Communication
Communicate clearly and respectfully with culinary, service, and management teams.
Work cooperatively with servers, bartenders, bussers, hosts, and other staff.
Assist fellow team members when needed.
Communicate timing issues, special requests, and guest concerns promptly.
Participate in pre-shift meetings and service briefings.
Professional Standards
Arrive on time and fully prepared for each shift.
Maintain proper uniform, grooming, and personal hygiene standards.
Keep work areas, service stations, and dining areas clean and organized.
Follow all club policies, safety procedures, and sanitation requirements.
Maintain confidentiality regarding members and guests.
Use professional language and appropriate conversation in all guest-facing areas.
Avoid personal conversations, cell phone use, or unnecessary distractions while on the floor.
